School’s
only been in session two months and I’m already out of
ideas for packing kids’ lunches. Luckily, my daughter
Maxine has contributed her own innovative thoughts on
the matter. She’s into coleslaw. She adds raisins or chopped
apple and puts the dressing in a separate container.
She loves wraps. She uses whole wheat tortillas to hold
left-over chow mein, sweet and sour pork, lemon chicken,
or teriyaki chicken. She pulls out the homous or spinach
dip and packs up some crackers.
But she’d take pumpkin
chocolate chip muffins everyday if she could.
My sister, Lori, sent
these recipes to me years ago, saying that they
don’t sound very good, but they are delicious.
